At first I thought Vefa Alexiandou used a ghost writer for this encyclopedic tome, given her warm & down to earth persona on Greek TV programs, then in reading through it I found she has a chemistry degree , which explains the concise & accurate recipes & analytical overview of the history of Greek cuisine. Much like Child’s analytical approach to French cooking; this is an overview of the food & history of a nation. America’s Test Kitchen has a reputation of being extremely thorough and reliable in their recipe writing. An award-winning author, journalist, and cooking instructor, Aglaia Kremezi, brings clarity and simplicity to each of the recipes. The mount athos monastery lentil soup was quite bland and surely the 500g of lentils required for the recipe served more than double the servings mentioned in the book.This is one of those Greek cookbooks that becomes an heirloom for families over the years. The over 200 fascinating recipes range from teasing appetizers to mouthwatering desserts. The beauty of these recipes is the versatility of them. Most of them are vegetarian that could have a meat protein added if you wanted or you could leave it as is.

And I have to say I agree, to an extent. Greek cuisine is highly influenced by the seasons. The locals live from the land and the sea and have a wide variety of fruit and veg that would make many a British chef envious. The recipes are all inviting even without the delicious looking photographs. The enticing recipe for Mount Pelion Bell Pepper and Onion Pie ( piperopita piliou), a phyllo pie stuffed with red, green, and yellow bell peppers, onions, scallions, and eggs, nearly made me leave the keyboard and head for the kitchen.
