They’re good to use instead of a masher as potatoes are full of starch and if you mash them too much, you can overwork that starch and end up with glue, making them horrible and gummy (and don’t ever use a hand-mixer, whatever Ina Garten might say). The potato ricer from Jamie Oliver is perfect for creating smooth, pureed potatoes and root vegetables, with interchangeable plates for coarse or fine ricing. There are few things more delicious, comforting or simple to make than a great dollop of buttery, smooth mashed potatoes!

I like colcannon for an interesting mash, or for something special mash with truffle oil, taste as you're making it, to get the flavour balance right for you. Remove with a slotted spoon and toss with melted butter and finely grated Parmesan, my Hero tomato sauce (or leftover sauce from a stew, which you can see in the picture), then finely grate over a little Parmesan, to serve. If opting for flavour combo 2, peel in a good few strips of clementine zest with a speed-peeler – you won’t eat these but they’ll add amazing flavour. Also, it could be trickier to clean by hand and even though it claims it is safe for non-stick cookware, it has fairly sharp edges.
