The resultant wort is fermented to produce the wash which then passes into the massive, continuously operating, two-columned Coffey or patent still.

One road, one pub and one distillery may not sound like much, but on Jura, the community thrives as one. Both varieties are produced differently – but both are produced in distilleries located in the most picturesque of settings, close to the natural ingredients on which their unique flavour depends.Crafted in exceptionally tall stills and matured for 10 years in America White Oak ex bourbon barrels. The last major rebuild of the distillery was in 1963, from whence it has been producing a variety of single malts. Found a bottle of the old 10 in my dad's cupboard and I prefer the newer version as the tastes are kind of more separated, whereas the old was molded into one.

The Jura 10 is the cornerstone of that relaunch, aging in ex-bourbon barrels before being finished for an undisclosed time in ex-Oloroso sherry casks. A whisky only Jura could make, born of Island and still produced today in a bottle originally shaped to withstand the roughest of journeys from home.
