If you know that your oven doesn't heat much from the bottom, or if you make the recipe and find the base is not quite as crisp as you like, you have a couple options. This edge, known as frico, is the crispy caramelized cheese that runs along the edges of Detroit-style pizzas. Former Buddy's employee Louis Tourtois made pizzas at Shield's before founding Loui's Pizza in Hazel Park, Michigan. In Detroit-style pizzas, cheese goes on the dough before the sauce and is spread all the way to the edge of the pan.

They are not like domestic pans you can purchase from large consumer retailers - they are made for professional, commercial use. I love Detroit style pizza (I grew up in Windsor Canada across the river) but hadn’t had it in a really long time since moving away, until I was back visiting last summer and decided I needed to start making it at home! The screen offers the advantage of protecting the dough from the radiating oven surface during cooking and avoids crispiness in case of combined cooking, that is, when the pizza is cooked in two times.

If you have a straight-sided vessel, transfer the dough to it; then cover it with a tea towel or bowl cover and set aside to rise at room temperature (70ºF/21ºC) for 4 to 8 hours (the time will vary depending on the time of year, the strength of your starter, and the temperature of your kitchen) or until the dough has roughly doubled in volume.

On the day of making pizza, set the dough on the counter at room temp for 1-2 hours in advance of proceeding to step 3. Another essential piece — unfortunately — is to use pre-shredded cheese, the starches in which prevent the cheese from clumping and melting too quickly. The recipe created a " focaccia-like crust" and the restaurant baked it in blue steel pans available from local automotive suppliers because baking pans available at the time were not appropriate for the dish.
