I had an 8 year old birthday girl request a Fox-themed lemon cake with blueberry frosting, but frosting had to be orange! (She knows what she wants!) so I made a lemon cake with a blueberry buttercream middle. My first recipe find was a bust and took much longer… this was a breeze and bursting with flavor!! Will definitely use again! The best way to rehydrate dried blueberries is to use hot water. All you need to do is soak the dried fruit in hot liquid – either hot water or hot fruit juice in a 2:1 ratio. The final product is blueberries that are plump, sweet, and full of flavor.

The hot water method takes 15-20 minutes. It’s important to note that over-soaking the blueberries in hot water can cause them to become mushy and lose their flavor.
